Ingredients
5 eggs
two 8 oz cheese
1 can condensed milk
1 tsp vanilla extract
1/2 cup karo syrup
1 bottle of langka or macapuno sticks
Instructions
1) Beat the first four ingredients and pour in a baking pan lined with karo syrup
2) Add macapuno sticks or langka
3) Bake for 45 minutes at 350 degrees, 5 more minutes if necessary. (Check if done by poking a toothpick into the flan. If it comes out clean, it is cooked.)
4) Cool and place in a plate upside down (looks like an upside-down cake)

Alcohol in Cooking
Contrary to what most people believe, and that includes most professionals, when using beer, wine or other alcoholic beverages in recipes, a lot of alcohol is left after cooking.
Here are the facts from the Agricultural Research Service of the USDA (1989).
Alcohol remaining after preparation:
100% Immediate consumption
70% Overnight storage
85% Boiling liquid, remove from heat
75% flamed
Alcohol remaining: baked or simmered:
40% 15 min.
35% 30 min.
25% 1 hour
20% 1.5 hour
10% 2 hours
5% 2.5 hours
Substitutions for Alcoholic Beverages in Recipes
Choose the substitute considering the sweetness of the dish
White Wine substitutes in recipes
Apple juice or carrot juice.
Vegetable stock or Chicken stock straight or with a little white wine vinegar
1/2 cup rice vinegar and 1 tablespoon white grape juice.
Red Wine substitutes in recipes
1/2 cup of grape juice with 2 teaspoons of red wine vinegar.
1/2 cup water and 2 teaspoons of balsamic vinegar.
Beef stock or chicken stock straight or with a little red wine vinegar.
Champagne substitutes in recipes
Ginger ale, sparkling grape juice.
Brandy substitutes in recipes
Apple juice, peach juice, white grape juice, pear juice.
Marsala substitutes in recipies

Tips
This is one of cooking tips I would love to share to all of you.
1. Acids
Acids help proteins coagulate, so adding either vinegar or lemon juice to water used for poaching eggs helps keep the eggs from spreading out.
2. ALLSPICE
(Pimenta officinalis; Pimenta dioica)
1 pound allspice = 6 cups
1 ounce = 6 tablespoons
1 tablespoon = 1/6 ounce
3. Black Eyed Peas, Dried
Storage - Store dry black-eyed peas in a cool, dry place off the floor. High temperatures cause hardening of the black-eyed peas; high humidity may cause mold.
Uses and Tips - Cooked black-eyed peas may be used cold in salads, in soups, casseroles, or stews, in chili, or as a vegetable side dish. They are also excellent mixed with rice

dissolve the yeast in the lukewarm water and 1 1/2 teaspoonful of white sugar. mix, then set aside until bubbly. mix everything together until well incorporated and smooth. transfer dough into a greased bowl, let rise for one hour, then form into a log, flatten out and fill with cheese and butter (optional), or just coil into a snail shape in a greased pan. if you are making individual cakes, divide the dough in equal pieces, roll into logs and coil or knot and place in greased muffin tins. let rise for another hour, then brush with butter and bake in a preheated 300°F oven for 25 minutes or until lightly brown. cool completely, slather with butter, dust with sugar and top with grated cheese, if desired.

Apple Yogurt Slush
Ingredients
1/4 tsp. nutmeg
1/2 tsp. cinnamon powder
1 tbsp. fresh lemon juice
1/2 cup white sugar
1 200 g. pack NESTLÉ Yogurt
4 cups chopped apples
1/3 cup water
Apple-Yogurt Mixture:
1/2 cup butter
Crumble:
1/4 cup grated cheddar cheese
1 1/2 tbsp. brown sugar
1 1/2 tbsp. all purpose flour
1/4 cup butter
1/4 cup white sugar
Instructions
1. Combine first 6 ingredients in a medium bowl.
2. Blend apples with water.
3. Add in the rest of the ingredients. Blend about 1 minute then set aside.
4. Combine all ingredients for crumble and mix until coarse.
5. Pour into blender 1 part or 1 cup of apple- yogurt mixture and 1 cup of crushed ice.
6. Process until smooth.
7. Top with half teaspoon crumble.

Buco Pie Special
Ingredients
Crust
2 cups all-purpose flour
1 tsp. salt
2/3 cup shortening
1 piece eggyolk
1 tsp. vinegar
1/4 cup ice water
Filling
4 cups coconut meat
1 cup coconut water
1 300 ml. can MILKMAID Sweetened Condensed Milk
2/3 cup cornstarch
Instructions
1. Blend flour and salt in a bowl. Cut in shortening using two knives or a pastry cutter. Combine yolk, vinegar and water; slowly add the liquid to the flour mixing until dough can be handled. Divide dough into 2 parts with one part slightly bigger than the other. Roll bigger dough to about 2 inches larger than a 16-inch pie plate. Fit dough into a pie plate, letting sides hang. Roll out remaining dough for the crust. Set aside.
2. Combine filling ingredients in a thick saucepan. Cook stirring constantly until thickened. Cool then pour into prepared crust. Cover with top crust; flute or crimp edges together to seal. Bake for 1 hr. at 425 degrees F. Cool before serving.

Japanese Fried Rice
Ingredients
4 cups cooked converted or parboiled rice (1 cup uncooked)
1 cup frozen peas, thawed
2 tablespoons finely grated carrot
2 eggs, beaten
1/2 cup diced onion (1/2 small onion)
1 1/2 tablespoons butter
2 tablespoons soy sauce
salt
Instructions
1. Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the refrigerator.
2. Scramble the eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea-size bits while cooking.
3. When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. Carefully toss all of the ingredients together.
4. Melt 1 1/2 tablespoons of butter in a large frying pan over medium/high heat.
5. When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. Cook rice for 6-8 minutes over heat, stirring often. (http://www.topsecretrecipes.com)

Choco Decadent Cake
Ingredients
1/3 cup white sugar, fine
1/3 cup butter, unsalted
2 pcs. whole eggs, beaten
2 tbsps. fresh milk
1 1/4 cups all purpose flour
2 tbsps. baking powder
1/4 cup choco powder
1/2 cup chocolate sauce
2 tbsps. caramel syrup
Instructions
Beat the sugar and butter until fluffy.
Gradually beat the eggs then stir in milk, flour, baking powder and choco powder.
Bake in an oven at 375°F for about 25 minutes.
When cool, top with chocolate sauce and caramel syrup.

Best Cookie Recipe
Ingredients
2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups oatmeal (blended)
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1 8 oz. Hershey bar (grated)
4 eggs
2 tsp baking powder
3 cups chopped nuts (your choice)
2 tsp. vanilla
Instructions
Measure oatmeal and blend in a blender to a fine powder.
Cream the butter and both sugars. Add eggs and vanilla;
mix together with flour, oatmeal, salt, baking powder, and
soda. Add chocolate chips, Hershey bar and nuts. Roll
into balls and place two inches apart on a cookie sheet.
Bake for 10 minutes at 375 degrees. Makes 112 cookies.

Filipino Style Spaghetti

Estimated & preparation & cooking time: 40 minutes.
Spaghetti Ingredients:
1 kg. spaghetti noodles
1/2 kg. ground beef
1/2 kg. ground pork
1/4 kg. hotdogs, diagonally sliced
1 kg. tomato sauce
3 pieces laurel leaves (bay leaves)
1/4 cup brown or white sugar
2 green bell peppers, diced
2 onions, chopped
1 head garlic, minced
3 tablespoons of cooking oil
1 cup of water
Salt and pepper to taste
1/2 cup grated cheese
Spaghetti Cooking Instructions:
Cook spaghetti noodles according to package instructions.
In a sauce pan or wok, sauté garlic and onions in cooking oil.
Add ground beef, ground pork, laurel leaves, bell pepper and a cup of water. Bring to a boil and let simmer for 10 minutes.
Add tomato sauce, salt and pepper to taste then let simmer for another 10 minutes
Add brown sugar and hotdogs. Continue to simmer for an additional 5 minutes.
Serve with the cooked spaghetti noodles and grated cheese on top.

Filipino Leche Flan

Preparation time: 30 minutes
Estimated cooking time: 1 hour
Leche Flan Ingredients:
1 can (390g) evaporated milk
1 can (390g) condensed milk
10 egg yolks
1 teaspoon of vanilla extract or lemon essence
For the caramel:
1 cup sugar
3/4 cup water
Leche Flan Cooking Instructions:
In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize.
Pour the caramelized sugar into aluminum moulds - you can use any shape: oval, round or square. Spread the caramel on the bottom of the moulds.
Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand or blender.
Gently pour the mixture on top of the caramel on the aluminum moulds. Fill the moulds to about 1 to 1 1/4 inch thick.
Cover moulds individually with aluminum foil.
Steam for about 20 minutes OR
Bake for about 45 minutes. Before baking the Leche Flan, place the moulds on a larger baking pan half filled with very hot water. Pre-heat oven to about 370 degrees before baking.
Let cool then refrigerate.
To serve: run a thin knife around the edges of the mould to loosen the Leche Flan. Place a platter on top of the mould and quickly turn upside down to position the golden brown caramel on top.
Cooking Tips:
You can tell when the Leche Flan is cooked by inserting a knife -if it comes out clean, it is cooked.

Pork BBQ Filipino Style

Estimated preparation: 20 minutes
Marinating: 30 minutes to 3 hours
Barbecue: 10 to 15 minutes each
Pork Barbeque Ingredients:
1 kg. pork
20 bamboo skewers
1 cup soy sauce
1 head garlic, minced
1 onion, finely chopped
1/4 cup of calamansi juice or lemon juice
1/2 cup of 7up, sprite or beer (optional)
1 teaspoon ground black pepper
3 tablespoons of brown or white sugar
1/2 cup of banana or tomato catsup
Barbeque Cooking Instructions:
Cut pork meat into thin and long slices - 1/4 inches thick and less than 2 inches wide.
In a mixing bowl, marinate the cut pork with the soy sauce, minced garlic, chopped onions, calamansi juice, ground pepper, sugar, banana catsup and the soda or beer (this tenderizes and adds flavour to the pork barbeque)
Mix well and keep in the refrigerator for at least 30 minutes (turning occasionally).
Prepare the bamboo skewers by removing splinters and soaking in water to reduce burning during barbeque.
String the pork on the skewers.
Over live charcoals, barbeque the pork on skewers until each barbeque is cooked - turning every few minutes on each side and basting the leftover marinate on the barbeque
