Baked Curry Chicken

1/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
2-1/2 lb. chicken pieces (white and dark meat)
2 Tbsp. butter or margarine, divided
1 cup coarsely chopped apples
1/2 cup chopped onions
3/4 cup BAKER'S ANGEL FLAKE Coconut, divided
1 clove garlic, minced
2 tsp. curry powder
1 Tbsp. flour
1-1/2 cups chicken broth
3 cups hot cooked rice



PREHEAT oven to 450°F. Mix 1/4 cup flour, the salt and pepper in medium bowl. Add chicken, one piece at a time; turn to evenly coat both sides. Place, skin-sides up, in single layer in shallow baking pan. Dot with 1 Tbsp. of the butter. Bake 15 to 20 min. or until chicken begins to brown.
MEANWHILE, melt the remaining 1 Tbsp. butter in medium saucepan on medium-high heat. Add apples, onions, 1/4 cup of the coconut, the garlic and curry powder. Cook and stir until onions are tender but not browned. Stir in 1 Tbsp. flour and the chicken broth; bring to boil. Remove from heat. Reduce oven temperature to 350°F.
POUR sauce over chicken; sprinkle with the remaining 1/2 cup coconut. Bake 20 to 25 min. or until chicken is cooked through (180°F). Spoon rice onto serving platter; top with the chicken and sauce.

I am an avid fan of any reality tv show. When I was in the Philippines I love watching any reality tv show. It's so cool so watch a show where there's no much acting nor script with full of challenges for all contestant and the who survives will win a prize. When I arrived here in the US, I was keep on searching reality tv that I could fall into. I'm glad I found one reality tv show. I'm more happy because it's not just simple reality tv because it's an online reality show. Wow I can still talk with my friends or blog hopping while watching it.

Woooohoooo... We bought Texas Rangers T-shirt yesterday. It's inexpensive shirt but a great souvenir to keep. We bought two for hubby which is only $2 each and one for me which is $5. It was fun watching the games while eating hotdogs, French fries and tacos. As we drive home, hubby told me my first time watching the baseball game here in Texas was lucky enough as Texas Rangers won! Hahahaha

Texas Rangers

Wooohooo! Texas Rangers Won last night. Gosh I can't believed I am going to enjoy going there in Arlington. I was kinda scared thinking it's an open field and might be hit by the ball on my face heheheh. But it was fun becaause hubby told me that when you catch the ball heading on your way, it's all yours. So after that I was hoping the ball will come on our way so we can have a great soveiner to keep. Well not lucky enough to have it hahaha.

Margarita

I want to share this Margarita Recipe to everyone especially to all housewife who can't go out to enjoy nightlife since they have their own family already. I didn't say it's ok to get drunk. Drinking once in a while isn't bad at all. Just 2 to 3 shots in one month is bad at all.

The Margarita is a great cocktail, but you have to make it correctly. You should avoid using bottled lime-juice since it adds an overly sweet taste. Use fresh limes hand picked at the supermarket; the best ones should be a bit soft when you squeeze them since these might have the most juice. Mexican limes are small in size but they do have an incomparable taste.

Classic Margarita

2 ounces tequila
1 ounce Triple Sec
1/2 ounce Mexican lime juice

If you want a lighter Margarita:
1.5 ounces tequila
3/4 ounce Triple Sec
1/2 to 1 ounce Mexican lime juice

Combine the ingredients in a cocktail shaker with ice that might be in cubes, coarsely chopped, or finely crushed. You might strain the mixture or pour it into a salt-rimmed margarita or martini glass. To get the salt to stick to the glass pour fine salt on a plate, then run a lime wedge around the lip of a Margarita glass and lightly press it against the salt.

You may use Cointreau, Grand Marnier, Mandarin Napoleon, or Midori instead of Triple Sec. If you want a strong agave flavor use a Blanco tequila. For a milder taste use Reposado. If you are giving a party use Gold: it's cheaper.

1-1/2 ounces tequila

Lemon Chicken w/ Macaroni Salad

Hummm so full right now. I Ate to much tonight. I made Lemon Chicken with Rice and Maracani Salads as a dessert. Yummy! Wasn't able to grab PPP though because I was keep on going to the kitchen to prepare ingredients, slice and checking it once in a while. It's okay though because it's worth to pig out sometimes... hahahah that's the term I heard from my mother in law while we were on the table.

Shrimp and Fried Dain na Bangus

This a fried Daing na bangus and sauteed shrimp with sprite. And pineapple in the side. This is our dinner last Wednesday. No wonder why hubby is gaining weight hahhaha. Well he is not really fat just gained a little bit. Anyway, I wasn't able to post this becauseI was reformating the computer so I lost a some of my files what I thought it's being saved on the CD but sad to say it was just the picture that was saved. Yeah reformating and installing is what made me busy a couple of days.

Heating System

I just got home from shopping with my in laws today. I'm a bit tired but I really had fun with them as usual. They are so sweet to me and Tony. I have nothing to ask for. And to at least give them something for Christmas that they would appreciate, I mean I know they have everything they need but my husband and I wanted to give something that they can really use.
