Wolfgang's Bacon-Wrapped Meat Loaf

Can you tell the main ingredients is Meat Loaf? Try making it for your family or friends.

Ingredients:
3 tablespoons Olive Oil
1 large onion, diced
1/2 pound Mushrooms, finely chopped
3 Large cloves garlic, minced
1 cup Heavy Cream
1 1/2 teaspoons Minced fresh oregano
1 1/2 teaspoons Minced fresh thyme
1 1/2 teaspoons Salt
1/2 teaspoon Freshly ground black pepper
1 pound Lean ground pork
1 pound Lean ground beef
1 pound Ground veal
1 Egg, lightly beaten
3/4 pound Sliced bacon

Directions:
1. In a large skillet over medium high heat, heat the olive oil.
2. Saute the onions until translucent, about 8 minutes.
3. Add the mushrooms and garlic and cook over medium high heat for 3 or 5 minutes.
4. Add the cream, oregano, thyme, salt and pepper. Bring mixture to a boil.
5. Reduce heat and simmer 5 minutes or until vegetables are tender.
6. Cool vegetable mixture.
7. In large bowl, combine the beef, pork, veal and vegetable mixture. Stir in the egg.

Preheat oven to 400 degrees F.

1. Place a 9 x 5 x 2 1/2-inch loaf pan with the short side facing you.
2. Take bacon slices and place them across the pan, slightly overlapping, to line the bottom and sides.
3. Continue with the meat mixture, patting down to level.
4. Fold the ends of the bacon strips up and over the ground meat mixture.
5. Place the loaf pan in a larger baking or roasting pan and fill the larger pan with boiling water halfway up the sides of the loaf pan. Cover with aluminum foil and bake for 1 hour.
6. Remove the foil and continue to bake 30 minutes or until an instant read thermometer registers 165 degrees F.
7. Remove the meatloaf from the oven and let rest for 10 minutes.
8. Carefully pour the juices out of the pan. Cut into 8 slices

Brocolli Rice Casserole

I have never tried this but I would love to help my mother in law in making one for thanksgiving. This is just one of her recipes that they always make every year. I can't think of how I am going to try everything she's going to prepare on thanksgiving because it was like a long list of things we made today for i think 10 recipes. Huh time to pig out?

Ingredients:

10 oz pkg frozen chopped broccoli
1 can cream of mushroom soup
1 large onion chopped and sauteed in butter
1/2 cups grated cheddar or marble cheese
3 cups cooked rice
1 cups mushrooms (stems & pieces)

Directions:

Mix all ingredients together well and bake at 350°F for 30 minutes.

Pecan Pumpkin Pie

My mother in law and I made a list of everything she needed to buy for all food she is going to make for the thanksgiving. And since they two pecan tree in the backyard and since there's a lot of fruits on those tree, she decided to make a Pecan Pumpkin Pie.


Ingredients:

1 (3 1/2- to 4-ounces) fine-quality 60%- to 70%-cacao bittersweet chocolate bar, finely chopped
Pastry dough
2 cups pecan halves (7 ounces), toasted and cooled
3 large eggs
1/3 cup packed light brown sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
3/4 cup dark corn syrup

Preparations:
Preheat oven to 375°F with rack in middle.

Melt chocolate in a metal bowl set over barely simmering water, stirring. Remove from heat.

Roll out dough into a 13-inch round on a lightly floured surface with a lightly floured rolling pin. Fit into a 9-inch pie plate. Trim excess dough, leaving a 1/2-inch overhang. Fold overhang under and press against rim of pie plate, then crimp decoratively.

Spread chocolate in bottom of pie shell with back of spoon and let it set, then cover with pecans.

Whisk together eggs, brown sugar, vanilla, and salt in a bowl, then whisk in corn syrup and pour over pecans.

Bake pie until filling is puffed and crust is golden, 50 to 60 minutes. (If pie is browning too fast after 30 minutes, loosely cover with foil.) Cool pie on a rack to warm or room temperature. Serve with whipped cream.

Calling home for the holidays is an important thing for me. This is my first year here in the US and it's my first time to celebrate holidays away from my parents and siblings. That's I make sure I have some phone card ready because I will definitely need at least two or three to call of them.

Sugar Cookies

Here's another recipes we are going to make on the Thanksgiving. All the kids in the family and even older ones loves sugar cookies. It's not bad to give ourselves a day to pig out. hehehe

Ingredients:

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract


Directions:

Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Ingredients:

1lb Chicken
Flour
1 or 2 Spoon of Butter
2 Eggs
Lemon
Salt and Pepper

Directions:

* Clean and slice the chicken into strips and set aside.
* Heat the oil in a deep skillet.
* Beat 2 eggs in a bowl and set aside.
* Put flour on a bowl and add salt and pepper to taste.
* When the is hot enough, put butter and squish lemon.
* Then fry the chicken strips, flip it over when it's golden brown.

This is a fruit called Dorian. I remember when I was a kid I had never tried this one because of it's smell. But everyone said it's really yummy.
