Nilagang Baka

It's getting cold everyday so "Nilagang Baka" is really good to serve on table for your family. I found out that the English term of "Nilagang Baka" is "Beef Stew". Humm I've learn something today because all these time I called it Boiled Beef with Vegetables hahahah.

Ingredients:

1 kilo beef, cut into 1 1/2" x 1 1/2" cubes
8 potatoes cut the same size as the beef
1 bundle Pechay (Bok choy) cut into 2 pieces
1 small cabbage, quartered
5 onions, diced
1 head garlic, minced
4 tablespoons of patis (fish sauce)
3 tablespoons of cooking oil
10 corns of black pepper
1 liter of water
Salt and pepper to taste

Procedure:

1. Beef Stew Cooking Instructions:
2. In a big casserole, heat oil and sauté the garlic and onions.
3. Add water, the beef, black pepper and patis. Bring to a boil then simmer for 1 hour or until the beef is tender.
4. Add the potatoes. Continue to simmer until potatoes are cooked
5. Add the cabbage then the pechay. Do not over cook the vegetables.
6. Salt and pepper to taste.
7. Serve steaming hot in a bowl and plain white rice.

Sinigang Na Baboy

This is another Filipino Recipe that you can prepare during this cold season. I am going to try this tonight so wish me luck. Hopefully my husband will like this, if not then he needs to eat a toast for himself hahhaha.

Ingredients:

3/4 kilo Pork, cut into chunks
3 tomatoes, sliced
2 onions, diced
5 cloves of garlic, minced
100 grams Kangkong (river spinach)
100 grams String beans
2 pieces horse radishes, sliced
3 pieces gabi (taro), pealed
200 grams sampalok (tamarind)
3 tablespoons of patis (fish sauce)
1 liter of rice wash or water

Procedure:

1. Boil sampalok in water until the shell shows cracks. Let cool then peal off the shells and with a strainer, pour samplalok (including water) into a bowl. Gently massage the sampalok meat off the seeds, strain again.
2. In a pot, sauté garlic and onion then add the tomatoes. Let simmer for 5 minutes.
3. Add pork and fish sauce then add the rice wash. Bring to a boil then simmer for 15 minutes then add the gabi. Continue to simmer for another 15 minutes or until the pork is tender.
4. Add the horse radish, simmer for 10 minutes then add the string beans and kangkong. Let boil for 2 minutes.

Sauteed Pork Chops w/ Pineapple

This is our dinner last night. I just cook rice and sautéed some pork chops and put pineapple when it was almost done. It was really yummy and my husband enjoyed it a lot. I am just lucky my husband will eat almost everything I cook or make. As far as I could remember, he only dislike salted dried fish "Daing/buwad" and fish sauce "bagoong"

Our Christmas Tree

This is our unfinished Christmas tree. There are some ornaments that needed to be hang and I am still trying to make some ribbons so it’s not really done yet. But there’s no big hurry though because I still have time before December or should I say before Christmas heheheh.

Stockings For Christmas

This is the setting of the big table in Mama Nelda's house. As you can see the table cloth is very beautiful with fall designs… I love it.

This is one of the food you can find on the table yesterday at Mama Nelda's house. Wow she really bake so good. I think this is my favorite among all the foods on the table. She also baked pineapple pie that I haven't tasted yet because I was so full already. But I will try it later since she gave us different bring house hehehe

Fannie May Candies for Christmas

Now that Thanksgiving is almost about to end, I am sure people will start shopping tomorrow or the next few days for Christmas which just 32 days from now. Wow I can’t believe time passed by so fast. I felt like it was just yesterday when I arrived here in USA. Anyway back to Christmas, most people would probably start putting up Christmas tree real soon In fact, I saw some places around Texas that have Christmas tree and lights when we were on the road going to Mama Nelda’s house. But the most important thing that I am exciting the most is shopping for toys, clothes, shoes, Christmas chocolate gift, and more stuff for Christmas presents for my family and friends.

Coconut-Cranberry Macaroon

Look at that Macaroons... hummm looks so yummy. I miss my sister Irish when I saw this Macaroons because she is really good on baking and cooking. And Macaroons is one of favorite pastries. But I want to try this one because it's so different from the Macaroons I love in the Philippines. This one have cranberries and orange zest.

Below is the recipe I got from Food Network

Ingredients:

2/3 cup sugar
2 large egg whites, lightly beaten
1/2 cup dried cranberries, finely chopped
Finely grated zest of 1 orange
2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
3 cups (about 8 ounces) finely shredded unsweetened coconut

Directions:

Preheat oven to 350 degrees F. Line 2 baking sheets with parchment.
Whisk the sugar, egg whites, cranberry, orange zest, vanilla and salt in a large bowl. Toss the coconut with the egg mixture until completely coated.

Moisten your finger tips with water. Form about 1 heaping tablespoon of the batter into pointed mounds or pyramids on the prepared pans, spacing them about 1-inch apart.

Bake until the edges are golden brown and the entire macaroon is nicely toasted and dry, 16 to 20 minutes. Transfer to a rack to cool. Serve.

Store macaroons in a tightly sealed container for up to a week.

I felt sad though because Papa Barney just passed away this month. How I wish I could spend my first Thanksgiving with him. Well he still can in different way.
