Spirit Of Christmas

Few weeks ago, just before Christmas, I posted about "Give A Gift To Kids" Teacher Weng organized in their neighborhood, which had been the victim of 3 consecutive typhoons named "Mina, Lando ang Nonoy" which caused flood in this neighborhood in Aplaya Sunrise. These kids in the pictures lost their belongings and things for schools.

A big thanks to all people who have shared their blessings and made all those kids happy on Christmas. Thank you so much guys! And salute to our dear Teacher Weng... Job Well done!!!

Oven Roasted Fork

Have you ever tried "Oven Roasted Pork"? Humm it's so yummy especially if you deep it in a mixture of soy sauce, vinegar, ginger, onions, and cucumber. Hummm sarap talaga... Try it...

Ingredients:

· 1 (3 to 5 lbs.) fresh pork ham roast (or boneless shoulder picnic roast, a hog's head, or any parts of pork of your choice)
· salt

Cooking Procedures:

1. Preheat oven to 350°F. Prepare a roasting pan. Clean pork ham (or any pork parts of your choice) thoroughly. Dry with paper towels. Rub generously with salt all over. Transfer to a roasting pan and bake for about 3-1/2 hours (40 minutes per pound). Brush skins with fat drippings from the pan every 10 minutes during the last hour, making the skin crisp.

2. Increase oven heat to 450°F. Roast pork for about 20 to 30 minutes more or until golden brown. The skin should be crispy. Internal temperature reading is 170°F. Then remove from the oven. Cover with foil and let stand for 5 minutes. Cut into serving pieces and place into a serving platter.

Embutido

I saw this recipe on the magazine and would like to try making some for new year. Hopefully I'll do it right and hopefully hubby would like it heheheh.

Ingredients:

· 1 lb. ground pork
· 1/2 cup finely chopped carrots
· 1 cup (6 slices) finely chopped (sweet or cooked) ham
· 3 tbsp. minced green bell pepper
· 3 tbsp. minced red bell pepper
· 1/3 cup sweet pickle relish
· 1/4 cup raisins
· 3 whole eggs
· 1/2 cup grated cheddar cheese
· dash of liquid seasoning
· salt & pepper, to taste
· 1 tbsp. cornstarch
· slices of hard-cooked eggs
· slices (wedges) of Vienna sausage
· aluminum foil, 10" x 12" sizes

Directions:

1.Prepare a steamer and set aside. Alternatively, prepare a baking pan and a wire rack and preheat oven to 350°F. In a bowl, combine all the ingredients and mix until well blended. Divide the mixture into 2 to 4 portions (depending on how many you want to make).

2.Spread and flatten the mixture onto the center of each foil, divide the slices of hard cook eggs and Vienna sausages. Place each slices at the center of each mixture. Hold the foil onto your hand and roll until the ends of the mixture covers the eggs and sausages. Alternatively, by holding each ends of the foil, roll the mixture back and forth until it covers the slices of eggs and sausages in the center.

3.Finally, roll the aluminum foil into a tightly packed log about 1" to 2" in diameter, sealing on both ends. Repeat with the remaining pork mixture. Then place the embutido in a steamer and steam for an hour. Alternatively, place embutido in a wire rack on a baking pan, half filled with hot water. Cover with aluminum foil (Be sure the steam will not escape). Steam-bake in the center of the oven for an hour.

4.Remove from the oven. Let it cool and slice into rings. Serve with your favorite catsup or sauces.

Boiled Banana

This is one of the food we had on Christmas day, a boiled banana. I know it might sound weird for others but gosh it was yummy for us especially pag saw saw sa ginamos na gidala ni Anne. Wow ahak nalang so yummy talaga. Do you think anyone in pinas would ever love to have a boiled banana on their table during Christmas? I don't think so... it was just us here because we don't usually have the this kind of food... yeah during craving time to our Filipino food, no matter what day it is, as long as we have the chance to cook and eat Filipino food kain talaga to the max..

Menudo

Ingredients:

1 kg pork tenderloins, cubed
3 medium potatoes, cubed
2 medium carrots, cubed
1/2 cup raisins
1 medium red bell pepper, diced
1 medium green bell pepper, diced
500 ml tomato sauce
100 g liver spread (originally, we use fresh pork liver but since it's very difficult to find a good liver, I substitute)
1 medium onion, chopped
2 garlic cloves, chopped
50 g grated romano cheese (Parmesan is also good)
Marinade
2 bay leaves
1 cup Sprite (Yes, Sprite.)
4 tablespoons soy sauce
2 tablespoons lemon juice
1 lemon, zest of, only
ground black pepper

Directions:

1. Combine all marinade ingredients. Divide the marinade in halves. Save half. Add pork cubes on the other half with the bay leaf and marinate for at least 30 minutes.
2. Remove pork from the marinade, drip dry.
3. Sauté garlic and onion, add pork and the unused half of the marinade and bay leaf, simmer uncovered, reduce the liquid to half. Then add fresh pork liver if you prefer the fresh ingredient, cover and cook. Add tomato sauce, liver paste (if this is what you're using), carrots, potatoes and raisins, simmer stirring occasionally. Add peppers and adjust the seasoning. Then lastly add the grated cheese, let it melt, stir and distribute evenly. Serve hot.

Christmas Desserts

Christmas won't be complete without Christmas desserts like cookies that's been shaped into Christmas tree, snowman, reindeer, and some other Christmas ornaments. And of course some chocolate fudge, coconut balls, and many more. Some people also put different chocolates on their table as well as other Christmas candies.

Kilawin Na Tuna

I am so happy when hubby and I went to asian market and saw fresh tuna. My gosh it's been a while since the last time I ate my favorite fish ever. I can't forget the time I was with my grandma's house who always prepares tuna or even stock tuna in the freezer and cook Inun-on, Tinola, escabetche, grilled, kinilaw and of course my favorite pritong tuna...wooo yummy!!! At last I was able to eat my favorite pritong tuna once again and I sill have some in fridge and freezer!!!

Guisadong Munggo

Sarap ng munggo ano? Mas lalong masarap pag lagyan mo din ng tuyo hehhehe.

Ingredients:

· 1 cup munggo (mung beans)
· 3 cups water
· 1 tbsp. vegetable oil
· 1/2 lb. pork, sliced
· 2 cloves garlic, minced
· 1 onion, chopped
· 2 tomatoes, chopped
· 2 pcs. Chinese sausage, cubed (optional)
· 2 cups water or broth
· 1 tbsp. patis (fish sauce)
· salt to taste
· 1 cup ampalaya leaves or substitute spinach or watercress

Directions:

1. Boil mung beans in water until soft and easily mashed. Set aside.

2. In a pan, heat oil. Cook pork until it turns slightly brown.

3. Add garlic, onions and tomatoes. Sauté for a few seconds until tomatoes wilted.

4. Stir in Chinese sausage (if using) and continue cooking for another 1-2 minutes.

5. Pour in water or broth and add boiled mung beans.

6. Season with patis and salt to taste. Bring to boil and let it simmer until thick.

7. Add ampalaya leaves or substitute. Cover and remove from heat. Serve hot.

Misua Soup with Egg

Soups is really the best food for me during cold weather...


Ingredients:

· 1 tbsp. oil
· 1 clove garlic, minced
· 1 onion, thinly sliced
· 3 cups chicken stock or water
· patis (fish sauce), salt and pepper, to taste
· 1 oz. misua (fine threadlike egg noodles)
· 4 eggs
· green onions, for garnish

Directions::

1. In a medium saucepan, heat oil over medium heat. Sauté garlic and onion. And then add chicken stock or water and bring to a boil.

2. Stir in misua noodles and then lower the heat to simmer. Season with patis, salt and pepper. After seasonings break the eggs into the simmering stock.

3. Cook until eggs are set for about 2-3 minutes. Remove from heat. Serve hot and garnish with green onions

Beef Steak

Ingredients:

3/4 kilo tender pork or beef steaks, sliced

1 tablespoon kalamansi or lemon juice

5 tablespoons soy sauce

3 cloves of garlic

1 small piece ginger, crushed

1/2 teaspoon ground black pepper

1/2 cup onions, sliced in rings

4 tablespoons cooking oil

Procedures:

1. Marinate the pork or beef steak in kalamansi (lemon) juice, garlic, ginger, soy sauce and pepper for 30 minutes.
2. In a frying, add cooking oil. Add the marinated pork or beef steak and cook slow until done. Increase heat for a minute or two to brown steaks.
3. Add the sliced onions and continue to cook for another minute.

Something I Can't Go Without

There’s something that I would never forget when I leave the house and go somewhere. I always makes sure that I have a wipes on my bag. The one that I use is something that will keep your sensitive skin areas clean and healthy.
I also make sure that the one I bought is free of chemicals, perfumes and alcohol to make sure I am not going to have any irritation and rashes.

Tinolang Manok

Ingredients :

· 1 lb. chicken, cut into serving pieces
or any choice cuts of your liking like thighs, drumsticks or wings)
· 1 thumb-sized fresh ginger root, cut into strips
· 2 cloves garlic, crushed
· 1 onion, chopped
· 2 tbsp. patis (fish sauce)
· salt, to taste
· 4 to 5 cups water (or rice water – 2nd washing)
· 2 to 3 sayote (chayote squash), quartered (or green, unripe papaya or potatoes)
· 1 cup sili (chili) leaves or malunggay or substitute 1/2 lb. spinach · vegetable oil
Directions:

1. In a medium saucepan, heat oil over medium heat. Sauté ginger and garlic until fragrant. Add onions, stir-fry until softened and translucent. Add chicken cuts. Cook for 3 to 5 minutes until chicken colors slightly. Season with patis and salt.

2. Pour in water (or rice water, if using). Bring to a boil. Lower the heat and let it simmer until chicken is half-done. Add in chayote (or papaya or potatoes, if using). Continue simmering until chicken and vegetable are tender. Correct seasonings and then add sili leaves or malunggay or substitute. Stir to combine until well blended. Remove from heat.

3. Let stand for a few minutes to cook the green vegetables. Transfer to a serving dish and serve hot.

Lechon Kawali

Ingredients :

Pork
· 1-1/2 lb. pork liempo (pork belly), cut into serving pieces
· 4 cloves garlic, crushed
· 1/4 tsp. pepper or 1 tsp. peppercorns
· 2 tbsp. salt
· water, for boiling
· oil, for frying

Sauce
· 1 tbsp. soy sauce
· 2-1/2 tbsp. vinegar
· 1 clove garlic, minced
· chili peppers (optional)

Cooking Procedures :

1. Put pork pieces in a big pot. Cover with water. Add garlic, pepper or peppercorns and salt.

2. Bring to a boil. Lower heat and simmer for an hour or until meat is tender. Drain.

3. Deep-fry liempo pieces in batches until golden brown and blisters appear on skin.

4. Drain on paper towels.

5. Mix together all ingredients for the sauce.

6. Serve with chopped lechon kawali.

· 1 lb. pork (i usually used pork belly or pork hocks), cut into serving pieces
· 1 cup water
· 3 cloves garlic, crushed
· 1/3 cup vinegar

· 1/4 cup soy sauce
· 1 bay leaf
· 1/4 tsp. pepper or 1 tsp. peppercorns
· 1 tsp. oil
· salt to taste
· 3 potatoes, peeled and quartered (optional)
· hard-boiled eggs (optional)

Cooking Procedures :

1. Combine all ingredients in a big pot and bring to a boil. Lower heat and simmer for about an hour or until pork belly or hocks is tender. You may wish to adjust the taste according to your style and liking.

2. If you want to add some potatoes and hard-boiled eggs in this dish, potatoes usually cook about 15 minutes. It’s up to you whether you like it very soft or just tender to bite. You may add it halfway of the cooking time or later.

3. As for the eggs let it sits for a few minutes before its done to let the sauces covered into it.

4. Remove bay leaf and peppercorns (if used) just before serving. Serve hot.

Let's help 120 Kids Victims of Typhoon and Flood

Calling to all my fellow kind hearted Filipina and friends in blogging! Let's give something or (anything that's from your heart) to make some kids happy this coming Christmas.

Teacher Weng, an elementary school teacher, single, who's very dedicated to her work and helping other kids organized a party or A Gift giving for those 120 kids in Aplaya Sunrise who are a victim of typhoon "Mina, Lando ang Nonoy" where some children lost their belongings and things for schools.

I can assure you that Teacher Weng is very trustworthy and that what ever amount of money you will donate will surely goes to the kids. As a matter of fact, she also donated her 13 month pay as well as her sister Nelda's 13 month pay.

Aplaya Sunrise is a neighborhood close to Manila Bay or Laguna Bay... These neighborhoods were flooded due to those typhoons I mentioned above.

Any gift for them is very much appreciated... Teacher Weng will send us whoever donates...a card and picture... so just give me your address if you want to donate...





Leche Flan

For some reason, I am craving for a Leche Flan today. Maybe because I saw our pictures last Sunday which was Filipina Christmas party. Oh gosh there was a lot of Filipino foods that day. And the dried fish? superb talaga! hahhaha yah believe it or not I eat tons of that dried fish because it was my favorite dain waaaahhh Suddenly my cravings turns to dried fish..... humm do you like the idea of eating Dried fish and Leche Flan???

Ingredients:

1 can (390g) evaporated milk

1 can (390g) condensed milk

10 egg yolks

1 teaspoon of vanilla extract or lemon essence

For the caramel:

1 cup sugar

3/4 cup water

Directions:

1. In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize.

2. Pour the caramelized sugar into aluminum moulds - you can use any shape: oval, round or square. Spread the caramel on the bottom of the moulds.

3. Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand or blender.

4. Gently pour the mixture on top of the caramel on the aluminum moulds. Fill the moulds to about 1 to 1 1/4 inch thick. Cover moulds individually with aluminum foil.

5. Steam for about 20 minutes OR Bake for about 45 minutes. Before baking the Leche Flan, place the moulds on a larger baking pan half filled with very hot water. Pre-heat oven to about 370 degrees before baking.

6. Let cool then refrigerate. When it's cold enough and ready to eat, use a thin knife around the edges of the mould to loosen the Leche Flan. Place a platter on top of the mould and quickly turn upside down to position the golden brown caramel on top.

Miniblind Spring Cleaning

To do the spring miniblind cleaning, take the blind down and take it outside. Then lay it on an old blanket preferably on a slanted area of the yard.Let the blind out all the way and make sure all the louvers are flat.Then mix up a bucket of all-purpose cleaner or ammonia solution.Scrub with a soft brush then turn it over to do the back side.
By now the blanket is wet and is helping to clean the blind and protecting it.
hang the blind on a clothesline and hose it off and gentle shaking will help it begin to drip dry.

Cleaning Miniblinds

I got an idea on how to clean a miniblinds. Simply slip your hands into a pair of socks for cleaning the miniblinds and then dip one hand into a bucket of warm, soapy water and hold the blinds between your two hands. Rub back and forth until you've cleaned the whole surface. Then reverse sides so the dry sock dries the blinds. After that wipe miniblinds with damp fabric softener sheets to eliminate static that collects dust. The same trick works for your T.V. screen.

Removing Water Stain

One of the reason why I like to hand wash our dishes instead of putting it to the dishwasher is because there were times that some glasses or spoon have "water stain" after I used the dishwasher.

I read some articles in the magazine and newspapers hoping to see some tips. Luckily I found some tips on how to remove water stain.

First, if the fabric is non-washable, gently scratch off the stain (which is made up of mineral deposits) with your fingernail. Still there? Hold the spot over a steaming teakettle until well-dampened. As it dries, rub the stain, working from its outer edges toward the center.

Second,remove hard-water stains from glasses and bottles by rubbing them with steel wool dipped in vinegar.

And if you have hard water stain in your bathroom fixtures, then cover it with a paste of baking soda and vinegar. Then drape with a terry clot towel and let stand for about an hour. Wipe off, rinse and dry.

Miniblind Spring Cleaning

After winter most people start cleaning their miniblind. So if you are going to the same thing on the spring then this tips will be useful for you. First take the blind down and take it outside. Then lay it on an old blanket preferably on a slanted area of the yard and let the blind out all the way and make sure all the louvers are flat.

Mix up a bucket of all-purpose cleaner or ammonia solution and then scrub with a soft brush then turn it over to do the back side. By now the blanket is wet and is helping to clean the blind and protecting it. After that hang the blind on a clothesline and hose it off. Gentle shaking will help it begin to drip dry.

Cleaning Wallpaper

Below is the tips on how to clean your wallpaper properly in easy way. Just follow the instructions I got in newspaper and enjoy cleaning!

1. To dust papered walls, tie a dust cloth over your broom and work from the top down.

2. To remove pencil marks and other non-greasy spots from non-washable papers, use an
art-gum eraser or a slice of fresh rye bread.

3. To remove greasy spots, crayon marks and food stains, apply a paste of cleaning fluid and fuller's earth, cornstarch or whiting. Let dry and brush off. Repeat the treatment until the spot is gone.

4. Wipe off fingerprints with a damp cloth, then sprinkle the moist area with fuller's earth. Let it dry and then brush it off.

5. To prevent splash marks when you're washing baseboards or other woodwork, mask wallpaper with a wide ruler, venetian blind-slat or a piece of rigid plastic.

6. When you save scraps of wallpaper for patching, tack them to a wall in the attic or closet. When you use them for repairs, they won't look so brand new.

Have A Walk In The CT

Good Job Annie! Even though the shot is not intended to get picture of hubby. I was really trying to get picture of those all booth they have created in the Fire Station's vacant lot or maybe parking area or whatever. I think this one is the best shot I ever had. Cutie Puppies

Do I look cute together with those little cutie puppies or shall I say Dalmatians? hummm I think I am just a distraction to the beautiful view of these Christmas decorations the Fire Stations created. hehehe....

That place was really beautiful and attractive at night. They have a very tall Christmas tree that's almost surrounded by different booth with lights. It was really awesome. And guess what? they will be creating more and more and as my husband said, they will be going to have an even where kids can take pictures in each booth and at the same time play some games and win some prizes on Christmas day.

Pinakbet

Humm pinakbet is one of my favorite food in Filipiña restaurant here in Texas. It's really good to eat with rice. And since I can't go there every time I crave for Pinakbet, I bought bagoong in asian market so I can cook here in the house. Humm


Ingredients :

· 1/2 lb. pork, sliced
· 2 tbsp. vegetable oil
· 3 cloves garlic, minced
· 1 onion, chopped
· 2 tomatoes, chopped
· 1/2 squash, cubed
· 2 cups sliced okra
· 2 cups 1-1/2 inch long cut sitaw
· 2 eggplants, sliced
· 1 ampalaya (bitter gourd and/or bitter melon), sliced
· 1 to 1-1/2 cup water
· 2 to 3 tbsp. bagoong alamang (salted shrimp paste)

Procedures:

1. In a large, deep skillet (or casserole), heat oil over medium heat. Cook pork until it turns slightly brown. Then stir in garlic, onions and tomatoes. Sauté for a few minutes and then add squash and okra, stir-fry for a minute or two and then add the rest of the vegetables. Gently stir to combine.

2. Pour in water and add the bagoong alamang, and bring to a boil. After that, try to lower the heat and simmer covered over low heat until vegetables are tender. Be sure not to overcook it. Gently stir to blend and remove from heat.

Stir Fry Beans

Ingredients :

· 1 lb. topside or round steak, cut into thin strips
· 2 tsp. brown sugar
· 2 tbsp. soy sauce (light or dark)
· 1 tbsp. patis (fish sauce)
· 2 tsp. lime juice
· pinch of salt and pepper, to taste

· 1 tbsp. vegetable oil
· 2 cloves garlic, minced
· 1/4 lb. sitaw, (string beans) or green beans, cut into 3 inches long
· 2 kaffir lime leaves, shredded (or a little finely grated lime rind)
· water (optional)
· 2 tbsp. coriander (cilantro) leaves, for garnishing

Procedures:

Cut the beef into thin strips across the grains. Combine brown sugar, soy sauce, patis, lime juice, salt and pepper. Stir to blend and then add the meat. Marinate for 10 to 15 minutes. Set aside. Heat oil in a wok (or deep skillet) over medium heat. Drain the beef, reserving the sauce. Fry the meat until tender for about 3 to 5 minutes and then stir in the garlic until fragrant. Then Add the beans, lime leaves (or a little finely grated lime rind) and the reserved sauce. Stir-fry for 2 to 4 minutes or until beans is tender. You may wish to add a little water and then adjust seasonings according to your style and liking. Remove from heat. Transfer to a serving platter. Garnish with coriander (cilantro) leaves and serve.

It's Raining Opps Today

Wow I can't believe it is raining opps today I was watching Tv and when I get back here in the bedroom to get something, I decided to open my computer and check PPP. And wow thank you so much God for this blessings. Actually until now I don't know which one to grab for I am so excited that turns my brain empty or something I don't understand... But gosh I wish I came here early for there are four $50plus opps and one $100plus. Unfortunately those higher opps are already gray... well at least there are still some left below 50's left....

Pancit Bihon

I felt like I want to eat pancit bihon today. It's kinda raining outside and it's a little bit cold so I think a pancit bihon will be good for today. Or maybe just for my tastebuds. hehheehe

Ingredients :

· 1 tbsp. cooking oil
· 1/2 lb. pork, sliced
· 2 cloves garlic, minced
· 1 onion, sliced
· 1 large carrot, julienne
· 1 red bell pepper, julienne
· patis (fish sauce), salt, pepper and soy sauce to taste
· 2 cups chicken broth or water
· 1 cup cabbage leaves, cut into thin strips
· 1/2 lb. pancit bihon (rice sticks noodles)
· wedges of lemon or calamansi, for garnish

Procedures:

1.Rinse bihon with tap water. Drain. Set aside.

2. Heat oil in a large skillet. Stir-fry pork slices until no longer pink in color. Add garlic and onion. Sauté for a few minutes until soft. And then season it with salt, pepper and soy sauce to taste. Then add carrots and red bell peppers. Stir-fry for a few minutes.

2. Then add chicken broth and a little water if you think you need to. Heat until boiling and add the drained bihon. The let it simmer and stir to loosen the noodles. Then add cabbage leaves and then turn off the heat. Mix well and Serve with lemon wedges or calamansi.

Cooking Pork Ribs In The Oven

Ingredients:

· 1 kg. (2 to 2-1/2 lb) baby back pork ribs, cut into 3 to 4 pieces
· salt and pepper, to taste

Sauce:
· 1 cup barbecue(barbeque) sauce
· 1 tbsp. soy sauce
· 2 tbsp. packed brown sugar
· 1 tbsp. onion powder
· 4 cloves garlic, minced
· 1 tbsp. salt
· 1 tsp. pepper
· 1/4 cup vegetable oil

Procedures :

1.Preheat oven to 300°F. Prepare a baking sheet and set aside.
2.Rub salt and pepper to pork ribs to seasoned well. Let set for 30 minutes to an hour in the refrigerator.
3. In a small saucepan, combine barbecue(barbeque) sauce, soy sauce, brown sugar, onion powder, garlic, salt, pepper and vegetable oil. Bring to a boil over medium heat. Stirring constantly until well blended. Reduce heat to low and let it simmer for 3 to 6 minutes or until thickened. Remove from heat. Set aside.
4. Cut pieces of aluminum foil into 14 inches (20 cm) sections. Place one section of rib in center of each piece of foil.
5. Reserve 1 cup of marinade. Divide remaining marinade equally among rib sections. Fold up sides of aluminum foil and seal, making sure that steam cannot escape. Transfer to a prepared baking sheet.
6. Bake ribs for 2 hours, or until tender and pulling away from the bone. Remove from the oven and set aside.
7. Preheat grill over medium heat.
8. Grill cooked ribs, basting with reserved marinade for about 10 to 15 minutes or until caramelized and darkened.
9. Transfer the oven barbecue baby back ribs to a serving platter. You may wish to slice into serving pieces and serve with your favorite sauce. Enjoy!

Daing Na Bangus

Ingredients:

1 kg Bangus (Milkfish) cleaned
1/4 cup Coconut vinegar
2 Serrano peppers
1/2 tsps Salt
1/2 tsps Ground pepper
2 cloves Crushed garlic
1/3 cup Peanut oil

Preparation:

Cut your fish lengthwise along the back, taking great care in not breaking the skin. The place the fish skin side down in a a wide and shallow container. Add vinegar, peppers, garlic, salt and ground pepper, and let marinate in your refrigerator for 24 hours, turning the fish over after the initial 12.
To prepare, drain, and fry with oil in a large skillet for 5 or 6 minutes, or until the fish reaches a golden brown color.

Craving For Sauce Of Kilawin Na Tuna

Ingredients of Kinilaw na Tuna or Kilawin na Tuna


1/2 kilo Tuna, slice into pieces
1-2 onions, chopped
1 medium ginger, sliced
1 cucumber, sliced
1 radish, sliced
1 Tabon-tabon, sliced in half
1 Biasong or Lime
vinegar
salt
sili or red hot pepper

Wash tuna and sliced into pieces. Add vinegar, biasong or lime, onions, ginger and mix together. In a separate small bowlput the grated the soft part of tabon2x and add vinegar, mashed then drain then add the juice to the mixture of tuna. Add the radish,cucumber,salt and sili or red hot pepper.

Serve with Rice and Sprite

Dinner Time

Looks like something we ordered in the Resto? Humm not really heheheh. This is our dinner last. It is a sauteed pork chops with sprite that's makes it tender. Hubby don't like tough meat which is very opposite to my father. But what's important to me is, he is not picky as he loves Filipino foods which I usually make. The only Filipino food that he dislike so much is the salted dried fish and fish sauce. heheeheh

Snow Man

I like it when hubby bring me to some places where there are so many different color of lights and Christmas decors in front of their houses. This is my first year here so I would love to get some pictures for souvenirs. But i don't think Christmas here would be the same when I was a kid. It was so fun we just to my aunt's house and when we get home, we have presents, cash, chocolates and candies with u... that was really memorable...

What A Beautiful House

Hubby has been telling me since last year that he would bring me to a place where houses decorates so much lights and stuff after thanksgiving. Finally it happened last night. We went to a village where you can see beautiful Christmas decorations even in the entrance. And wow when go inside the village, houses have more Christmas decorations. It was really wonderful. I know it's different in the pictures since it's kinda dark. Well we will go back anytime soon and hopefully get nice shots this time.

Pork Chop with Pineapple

Ingredients:
1 (4 ounce) boneless pork chops, 1/2-inch thick
4 teaspoons Jamaican Jerk seasoning
1/3 cup hot pepper jelly
2 tablespoons pineapple juice
1 teaspoon minced fresh ginger
4 slices fresh pineapple (cored, 1/2-inch thick)


Directions:

Coat chops with jerk seasoning; set aside for 5 minutes. Meanwhile, microwave jelly, pineapple juice and ginger on High for 30 to 60 seconds or until melted. Grill pork over medium-high heat for 5 to 6 minutes per side, turning once. Baste frequently with glaze. During last 3 minutes of grilling time, place pineapple rings on the grill. Baste with jelly mixture. Grill pineapple until heated through. Serve pork chops with pineapple.

2 to 3 lbs. pork shoulder with skin
4 cups of water

2 cups cooking oil

Preparation

Boil poil in water with salt until tender
Drain pork, let cool and air dry
Deep fry until skin hardens and blisters appear on the skin
Serve hot!

Dinuguan Recipe

I called in the Philippines few minutes ago and all of the sudden it makes me crave for Dinuguan. Hay pagkapait ning ikaw lang isa diri if you want to eat some dinuguan food sometimes it will make you lazy kasi ikaw lang kakain hehehe.

Ingredients

1 lb Pork, diced
2 tb Oil
2 Cloves garlic, minced
1 Onion, diced
1/4 lb pork liver, diced
1/2 cup vinegar
2 tablespoon patis (fish sauce)
1 teaspoon salt
1/4 ts MSG (optional)
1 1/2 cup broth
1 cup frozen pig's blood
2 teaspoon sugar
3 Hot banana peppers
1/4 ts oregano (optional)

Preparation

1. Cover pork with water and simmer for 30 minutes. Remove from broth and dice. Save 1-1/2 cups of broth.
2. In a 2-quart stainless steel or porcelain saucepan, heat oil and saute garlic and onions for a few minutes. Add pork, liver, patis, salt and MSG.
3. Saute for 5 minutes more.
4. Add vinegar and bring to a boil without stirring. Lower heat and simmer uncovered until most of the liquid has evaporated.
5. Add broth. Simmer for 10 minutes. Stir in blood and sugar; cook until thick, stirring occasionally to avoid curdling.
6. Add hot banana peppers and oregano and cook 5 minutes more.
