2 Pcs. Big Ampalaya (bitter melon)
1/4 kilo Pork
1 Red Onion
1. Wash the pork and slice it into long and thin, just like in the picture. Then add a little bit of soy sauce on the pork and set aside.
2. Wash the amplaya and slice it crosswise like you see in the picture then set aside. (If you don’t like it bitter taste, then you can rub salt on it and squeezed the juice.)
3. Slice the onion, garlic, and tomato and set aside.
4. Beat eggs, set aside.
Heat oil on a frying pan then add onion, garlic and tomato, mix it and then add and sautée the pork for few minutes. Then add the beaten eggs, mix it and add the ampalaya.
Tips: You can also use bagoong if you wish too
