Achara

This is my first time in my life I tried to make Achara. I grew up seeing my mother cook and sale it to our store in the market. But since I don't have my mother with me and I craved for it when I saw a raw papaya in Asian market I decided to grab one. Gosh the papaya I bought has been sitting on the fridge for weeks but glad it's still ok. When I called in the Philippines yesterday, my sister asked me if I made it already and. I checked all my ingredients after we talked and start shredding the papaya and prepared all the things I needed.
Ingredients:

1 Shredded Papaya
2 carrots
3 cups Vinegar
2 Gingers
1 Red bell pepper
1 Green bell pepper
3 Onions
1 tsp Freshly ground pepper
1 cup Sugar
1 tsp Salt

How To:

1. On a big deep skillet, boil a vinegar then add sugar, salt, and ginger. After few minutes, add the carrots, onion and let it simmer for at least 3 minutes.

2. Add the shredded papaya and let it simmer again for another few minutes then add the bell pepper. Add Freshly ground pepper, taste it and add sugar if you think it's needed.

Fish in Vinegar

I can't believe my husband like Paksiw hehehe. At first I thought he won't like but he did. He love fish so much and he usually don't care how I cook it as long as there's no salted fish sauce on it hahahah.

Ingredients:

Any kind of fish
Eggplant (optional)
Okra (optional)
Ginger- Sliced
Garlic- Chopped
Vinegar
Salt
Pepper

How To:

1. Wash the fish really good and set aside.
2. In a skillet, combine all the ingredients and bring it to boil until the fish is done.
3. Serve it with rice.

Ribs BBQ Recipe

This is the kind of food hubby always ordered every time we went to Benigans to eat. I's yummy but it's not my favorite to order. My favorite one is brownie bottom pie. It's a brownie with cream on the top hummm...sarap talaga... Below is the recipe I got.

Ingredients:

3 large baby back ribs
cup barbecue spice
2 cups hickory wood chips
1 1/4 cup barbecue sauce.

How To:

1. Lay ribs on baking sheet. Sprinkle both sides evenly with spice. Cover with plastic wrap and refrigerate at least 5 hours or up to one day. One hour before cooking, place wood chips in bowl and cover with water.
2.About a half hour before cooking, heat half the burners on one side of the gas grill on high. (If your grill has three burners, heat two.)
3.To set up the grill, pour 1 inch of water into a baking pan (a 13-by-9-inch pan works well) and set over hot part of grill, the lighted burners. Drain wood chips. Wrap in foil. Poke six holes in foil, and set next to water pan directly over high heat.
4.When wood chips begin to smoke, lay ribs curved-side up over cooler part of grill (unlighted burner). Use a rib rack to stand up ribs when doubling or tripling the recipe so all will fit. Close grill. Turn temperature to medium. Cook 1 1/4 hours for baby back ribs, 2 for spare ribs, until beautifully reddish-brown and meat is tender when tested with fork. If grill has thermometer, it should stay about 325 F during cooking. Brush ribs with barbecue sauce, close grill and cook 10 minutes longer.
5.To serve ribs: Remove ribs to cutting board. With large knife, cut between bones. Serve with remaining barbecue sauce. Heat barbecue sauce in microwave, so it does not cool off the ribs.

Stir Fry Beef Steak

This is the recipe of yummy stir fry beef steak ideal to eat with rice. Hubby and I enjoy this food so much that would make us go back to rice cooker to scoop for more. Humm

Ingredients:

1 pound sirloin steak
1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
1 tablespoon olive oil
1 onion, thinly sliced
1 (8-ounce) package sliced button mushrooms
2 (5-ounce) packages prepared fresh green beans
2 tablespoons Worcestershire sauce
1/2 teaspoon dry mustard powder
2 tablespoons lemon juice
1 cup beef broth
2 tablespoons cornstarch
2 tablespoons chopped fresh parsley

How To:

1. Firsts, trim excess fat from steak, cut in half, and cut across the grain (or perpendicular to the lines in the meat), into 1/2-inch strips. Sprinkle with salt and pepper. In heavy skillet, melt butter and olive oil; add the steak strips and stir-fry until brown, about 3 to 4 minutes. Remove meat from skillet with slotted spoon to a plate.

2. To drippings remaining in skillet, add onion and garlic; stir-fry until crisp-tender, about 3 to 4 minutes. Add mushrooms and green beans; stir-fry for 3 to 5 minutes longer. In small bowl combine Worcestershire sauce, mustard powder, lemon juice, beef broth, and cornstarch. Add to skillet and bring to a simmer.

3. Return meat to skillet; bring back to a simmer and cook for 4 minutes longer, until meat and vegetables are tender. Sprinkle with parsley and serve.

Gosh I am just so in love with their shiny, beautiful and artistically made sinks, bathtubs, faucets and other plumbing fixtures. How I wish we could build a house using those products. It’s my dream to build a house one day with my own choice of everything, from design, styles, to the materials that’s going to be used especially the plubming fixtures for your kitchen and bathroom.

S'more Brownies

Ok ok, I know you've got tired of my "Daing" post here! And I know I had been craving for it so much lately, actually until last night. And now I felt like I need something else. I can't imagine how much "D" I've eat for this past few weeks or maybe a month now di ako sure. Anyway I am craving for something new and this is what I want for today. Who will buy this for me if I can't drive? Hum no choice but wait for hubby to come home huhuhu. Ok here's the recipe I got from Food Network this morning.

Ingredients:

Crust:
6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt

Brownie:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour

Topping:
4 cups large marshmallows

Directions:

Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.

For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.

Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.

Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.

Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Sexy Chemises

Now is the right time to buy some summer stuff because most of them are available on sale where you can save more than what you’ve ever thought. Since I am earning already, I don’t mind shopping for myself. I feel great when I bought anything I need and want from my own money. I don’t know why but I don’t like the feeling of spending money of my husband into something I’d like to have. Just like now, I am busy shopping online buying some sexy chemises, lingerie, underwear, and accessories.

Daing and Sardines

This is a combination of "Daing and Sardines" with rice. I only had one meal the whole day yesterday because aside from I woke up late, I got busy editing my blogs. It was late afternoon when I had my breakfast and lunch, actually also consider it as dinner because it was about 4pm already. Anyway last night, about 11:00 o'clock I got hungry but I don't have any left over food aside from "Daing" because I just prepared a "Steak Fingers" for hubby. So what I did, I heated my leftover daing and rice and also got this sardines out in the pantry... waaaaaa what a combination huh?

Sauteed Shrimp with Sprite

I sautéed shrimps in garlic, onions, and then added about 2 cups of sprite, bring it boiled and waited until the sprite evaporated.

And then, in another skillet, I sautéed peeled shrimps in hot oil with onions and garlic and then added water, frozen mixed sliced vegetables, salt and pepper to taste. The reason why I cook two shrimp recipes was 'coz my husband don't like eating shrimps with head and skin.

Pocket Watch

I don’t know why but some people don’t like wearing watch especially men. Maybe they are just uncomfortable who knows. Wondering how they can go for the day with out any watch to look at what time is it? Hum they might have a pocket watch. Yeah pocket watch. You can get a small one that you can easily put on your slacks pocket or much better on your polo’s pocket.

Simple Fried Chicken

This is just a simple fried Chicken I prepare for lunch today. It is very simple and fast to prepare. Just marinate the chicken in soy sauce, black pepper, and squeeze of lemon. Grey Poupon

Hello to all of you my friends, how are you doing today. I hope you are all having a happy first day of the week. Speaking of being happy, I am truly happy today for I have tried this new different flavor of Grey Poupon mustard. The “Hearty Spicy Brown” and “Harvey Coarse Ground.

Hubby and I have different likes and dislike when it comes to foods. And it’s been tested again today as we’ve tried this mustard. Actually, I've been asked to try these Grey Poupon Mustards and give an honest review. But of course it would be more fun if I invite my husband to join me. I made a turkey sandwich and whipped enough amount of this Grey Poupon. And wow I like the Harvey and hubby loves the spicy the spicy one.

Guys try it, it’s really delicious. Each different GREY POUPON signature flavor is distinctly suited to unlock the hidden flavors of particular delicious foods. "Pairing" is the magic word.

Crispy Pata Recipe


Ingredients:

1 Pata (front or hind leg of a pig including the knuckles)

1 bottle of soda (7Up or sprite)

1 tablespoon of salt

2 tablespoons patis (fish sauce)

1/2 tablespoon baking soda

1 tablespoon of monosodium glutamate (MSG)

4 tablespoons of flour

Enough oil for deep frying

Enough water for boiling

How To:

Clean the pork pata by removing all hairs and by scraping the skin with a knife. Wash thoroughly.

Make four to five inch cuts on the sides of the pata.

On a deep stock pot, place the pata in water with soda and salt. Bring to a boil and simmer for 20 minutes. Then add the baking soda and continue to simmer for another 10 minutes.

Remove the pata from the pot and hang and allow to drip dry for 24 hours. An alternative to this is to thoroughly drain the pork pata and refrigerate for a few hours.

After the above process, rub patis on the pata and sprinkle flour liberally. In a deep frying pot, heat cooking oil and deep fry the pork pata until golden brown.

Crispy Pata Dip Sauce:

Mix 3/4 cup of vinegar, 1/4 cup soy sauce, 2 cloves of crushed garlic, 1 head of diced onion and 1 hot pepper. Salt and pepper to taste.

Amby Baby

This year is a wonderful year for all my friends who are about to deliver their baby pretty soon. Yes I have 4 friends that are pregnant, two of them are going to have baby girl and the other two will be having a baby boy. When I was surfing online and saw amby baby products, it reminds me of my friends.

Adobong Pusit

This is the adobong pusit I cooked yesterday. I was busy with something that made me forget to upload this menu I cooked for myself. Humm

Ingredients:

1 lb. pusit/squid
1 1/2 tsp. salt
1 small bay leaf
1/4 tsp. pepper
3-4 cloves garlic minced
1/3 cup vinegar
1/4 cup water
half square of knorr cubes
3 tbsp. cooking oil
1 small onion, thinly sliced

How To:

First wash or defrost the squid. Sautee onions and garlic in hot oil. Add the squids, sautéed it and wait until the juices evaporates after 10 minutes and then add vinegar, salt, pepper, knor cubes, and tet simmer for about 15 to 30 minutes depending on how cook you want the squid.

Filipino vs Foreigner

Coffee Wars

Let's have a little talk about coffee. Now that the weather is getting colder, most people can't start working with out a cup of coffee. Most offices even serve coffee and milk chocolates. But I have a question for you guys, Where would you like to buy coffee, McDonald's or Starbucks?

The giant fast food McDonald's are going to serve coffee along sides the burger. Some people are now looking forward to try it. Humm is it good to eat french fries and burger with coffee instead of coke? What do you think.

Lunch with Ate Rose

This was our lunch in ate Rose house right after we went to hongkong market few days after Christmas.

If you want to have a good taste of grilled fresh fish, then cut straight on the belly of the fish and put some mixture of soy sauce, ginger, onions, and tomato inside it. After you stock the fish with the mixture of soy and other stuff, sew the belly so that the mixture won't comes out once you flip the fish in the grill.

Heat the grill and put the fish. Check it once in a while. You will know when the fish is done when you use a fork or toothpick.

Fried Dried Fish

I had been craving for dried for quite some time. It's weird but there are just time you crave Filipino food so much no matter how yummy looking the pagkain here... (yummy looking lang kasi not as delicious sa Pinas food ba).

Anyway, this is the dried fish I bought in Hongkong market. Humm gosh so yummy but I had been eating it everyday for the whole week already and today I felt like I have a fever. Could it be dahil naparami na kain ko? hehhehe iwan ko ba may sipon na nga ako meron pang phlegm at konting sinat... grrrrr

Chocolate Chips Cookies

Woke up today and looking for something to eat. When I check the pantry, I don't know what to make. But I felt like I wanted some Chocolate chips cookies. Humm wonder why. I think my tongue is tired with the taste of the dried fish I had been eating for a week now. Maybe it's time for a change... hehehe

Ingredients:

1 cup (2 sticks) of butter
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1/4 cup light corn syrup
1 egg
2 teaspoon vanilla
21/2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 package (10-12 oz.) of chips

How To:

Heat the oven to 350. In a large bowl, beat the butter, brown sugar, and granulates sugar until light and fluffy. Add the corn syrup, egg, and vanilla and beat well till blebded. Stir in chips of any flavor.

Drop by rounded teaspoon onto an ungreased cookie sheet. Bake for 8-10 minutes or until lightly browned and almost set.

Cool slightly, then remove from cookie sheet to a wire rack. Let cool completely. These cookies will be soft and chewy.

Today's Races - New Hampshire

Let's talk first about the current politic news here in the US. My husband called me from his work today just to ask me to open CNN news and look who is leading among presidency candidate. There's a poll race today at New Hampshire. The last polls close will close at 7:00PM. As of now, On Democratic side leading is Obama-16, next is Clinton-15 and then Edwards-14. On other hand, Romney is leading Republicans State with 20 votes and then next is , Huckabee 17, and Thompson-6.
